Comparison of quantities of some protein fermentation products during digestion of animal meat and plant based meat analogues in simulated gastrointestinal tractus

Meat and meat products are among the highly nutritious food sources. They contain high amounts of iron and zinc minerals, and vitamins such as B6, B12, and folic acid. However, they also contain substances that negatively affect health, such as saturated fat and sodium. Furthermore, they have a high carbon and water footprint and contribute to greenhouse gas production. Reducing meat consumption is necessary to ensure the reliability of the food system. Plant-based meat products, emerging as alternatives to traditional animal-based meat products, can help reduce meat consumption. Consumption of dietary protein sources can lead to the production of microbial metabolites. Protein fermentation results in the release of short-chain fatty acids, phenols, p-cresol, indole derivatives, kynurenine, kynurenic acid, xanthuronic acid, and serotonin. The aim of this study is to reveal the differences between animal meat and plant-based meat products in terms of the health effects they have. For this purpose, eight commercially available plant based meat products and eight animal meat products were selected. The samples were cooked according to the label information on the back of the package. Furosine analysis was performed on the cooked sample. The samples were then subjected to in vitro digestion. Subsequently, analyses were performed on the samples for amino acids, short chain fatty acids, phenol, p-cresol, indole acetic acid, indole propionic acid, kynurenine, kynurenic acid, and xanthurenic acid. The results showed that plant-based meat products contained significantly more acetic acid, serotonin, and kynurenine, and less glycine, arginine, histidine, threonine, lysine, and tryptophan amino acids compared to animal products. Blocked lysine was higher in plant-based meat products, while protein and essential amino acid content was higher in animal meats. Looking at product labels, plant based meat products contain more salt and less saturated fat. These results indicate that plant-based meat products are advantageous compared to animal meats in terms of health beneficial metabolites such as serotonin, kynurenine, and short-chain fatty acids; however, protein, amino acid, protein quality, and salt content should be considered when consuming these products. However, further research is needed to expand the scope of metabolites examined in this study and increase the sample size.

Pişirilmiş örnekten furozin analizi gerçekleştirilmiştir. Ardından in vitro sindirime tabi tutulmuştur. Daha sonra örneklerde amino asit, kısa zincirli yağ asitleri, fenol, p-kresol, indol asetik asit, indol propiyonik asit, kynürenin, kynürenik asit, ksantürenik asit analizleri yapılmıştır. Sonuçta bitkisel et ürünlerinin, hayvansal ürünlere göre anlamlı derecede daha fazla asetik asit, serotonin, kynürenin, daha az glisin, arjinin, histidin, treonin, lizin ve triptofan aminoasitleri içerdiği gözlemlenmiştir. Bloke lizin bitkisel et ürünlerinde daha yüksekken, protein ve elzem aminoasit miktarı hayvansal etlerde daha yüksektir. Ürün etiketlerine baktığımızda, bitkisel et ürünleri daha fazla tuz, daha az doymuş yağ içerir. Bu sonuçlar bitki bazlı et ürünlerinin serotonin, kynürenin, kısa zincirli yağ asitleri gibi sağlık açısından faydalı metabolitler kapsamında hayvansal etlere göre daha avantajlı olduğu, ancak protein miktarı, amino asit içerikleri, protein kalitesinin ve tuz içeriğinin bu ürünlerin tüketiminde göz önüne alınması gerektiğini göstermektedir. Bununla birlikte, çalışmada incelenen metabolitlerin kapsamı genişletilerek ve örneklem boyutu artırılarak daha fazla araştırma yapılmasını gerekmektedir.
